When the agave is mature, jimadores harvest it by cutting away the long spiky leaves and leaving behind the core, known as the piña. That heart is what matters. It holds the sugars that will eventually become tequila.
It’s physical work, skilled work and one of the clearest reminders that tequila is an agricultural product before it’s anything else.

Cooking unlocks the sweetness.
Raw agave isn’t ready for the bottle. First, the piñas are cooked so their complex carbohydrates can break down into fermentable sugars. This is the moment where the plant starts moving from field ingredient to spirit ingredient.

Once cooked, the agave is processed so the sweet liquid can be collected. That juice becomes the base for fermentation. Different producers can use different equipment, but the goal stays the same: capture the agave character and move it cleanly into the next stage.
